Ingredients
For the chicken
- 2 chicken breasts, diced
- 2 tbsp honey
- Juice of 2 limes
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper
- 1 tbsp olive oil
For the rice layer
- 2 cups cooked rice
- 2 tbsp chopped cilantro
- Juice of 1 lime
- Salt to taste
For the avocado layer
- 2 ripe avocados
- Juice of ½ lime
- Salt and pepper
Optional toppings
- Cherry tomatoes, diced
- Corn kernels
- Red onion
- Cilantro
- Chili flakes
Instructions
1. Marinate the chicken
In a bowl, mix:
- Honey
- Lime juice
- Soy sauce
- Garlic
- Paprika
- Salt and pepper
Add chicken and marinate for 20–30 minutes.
2. Cook the chicken
Heat olive oil in a skillet over medium-high heat.
Cook chicken for about 6–8 minutes until caramelized and fully cooked.
3. Prepare the rice
Mix cooked rice with:
- Lime juice
- Cilantro
- Salt
4. Prepare avocado mash
Mash avocados lightly with:
- Lime juice
- Salt
- Pepper
Keep slightly chunky.
5. Assemble the stack
Using a small bowl or food ring:
- Add rice layer and press gently
- Add avocado layer
- Top with honey lime chicken
Carefully lift the mold.
Garnish
Top with:
- Tomatoes
- Corn
- Cilantro
- Extra lime drizzle
Serve immediately.
