Moist, soft, and lightly sweetened banana bread made extra tender with Greek yogurt.

Ingredients

  • 3 ripe bananas, mashed
  • Β½ cup Greek yogurt
  • β…“ cup melted butter or oil
  • 2 eggs
  • Β½ cup brown sugar or honey
  • 1 tsp vanilla extract
  • 1Β½ cups all-purpose flour
  • 1 tsp baking soda
  • Β½ tsp baking powder
  • Β½ tsp cinnamon
  • ΒΌ tsp salt

Optional Add-Ins

  • Chocolate chips
  • Chopped walnuts or pecans
  • Blueberries

Instructions

  1. Preheat oven
    • Set oven to 350Β°F (175Β°C).
    • Grease or line a loaf pan.
  2. Mix wet ingredients
    • In a bowl, combine mashed bananas, Greek yogurt, melted butter, eggs, sugar, and vanilla.
  3. Mix dry ingredients
    • In another bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.
  4. Combine
    • Fold dry ingredients into wet ingredients until just combined.
    • Stir in optional add-ins if using.
  5. Bake
    • Pour batter into loaf pan.
    • Bake 50–60 minutes or until a toothpick comes out clean.
  6. Cool
    • Let cool 10 minutes before slicing.

Tips

  • Use overripe bananas for best sweetness.
  • For extra moisture, add an extra spoonful of yogurt.
  • Store covered for up to 3 days or freeze slices individually.
