
Ingredients
- 6 large eggs
- 1/2 cup soy sauce
- 1/2 cup water
- 2 tbsp sugar
- 1 tbsp mirin (optional, or honey)
- 1 tsp sesame oil
- 1 garlic clove, crushed
- 1 green onion, chopped
- 1/2 tsp chili flakes (optional)
Instructions
- Boil the eggs
- Bring a pot of water to boil.
- Gently add eggs and boil for 6–7 minutes for soft, jammy yolks.
- Immediately transfer to ice water to stop cooking. Peel carefully.
- Prepare the marinade
- In a bowl, mix soy sauce, water, sugar, mirin, sesame oil, garlic, and chili flakes.
- Stir until sugar dissolves.
- Marinate eggs
- Place peeled eggs in a container or ziplock bag.
- Pour marinade over eggs.
- Refrigerate at least 4 hours, ideally overnight.
- Serve
- Slice in half and sprinkle with chopped green onions or sesame seeds.
- Perfect as a snack, ramen topping, or side dish.
