- 1 cup buttermilk

Instructions
- Mix dry ingredients: In a bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt.
- Mix wet ingredients: In another bowl, whisk together buttermilk, egg, and melted butter.
- Combine: Pour wet into dry ingredients, stir until just combined. Batter will be thick.
- Heat oil: In a skillet, heat about 2–3 tbsp oil over medium heat.
- Fry: Drop spoonfuls of batter into the skillet, flatten slightly. Fry 2–3 minutes per side until golden brown.
- Drain: Remove and place on paper towels. Serve warm.
