  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 2 tbsp sugar (optional)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter or oil (plus more for frying)

Instructions

  1. Mix dry ingredients: In a bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt.
  2. Mix wet ingredients: In another bowl, whisk together buttermilk, egg, and melted butter.
  3. Combine: Pour wet into dry ingredients, stir until just combined. Batter will be thick.
  4. Heat oil: In a skillet, heat about 2–3 tbsp oil over medium heat.
  5. Fry: Drop spoonfuls of batter into the skillet, flatten slightly. Fry 2–3 minutes per side until golden brown.
  6. Drain: Remove and place on paper towels. Serve warm.
