Ingredients

  • 2 boneless chicken breasts (or thighs)
  • 3 medium potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp black pepper
  • 1 tsp salt (or to taste)
  • ½ tsp dried oregano or Italian seasoning
  • ½ cup chicken broth

Instructions

  1. Prepare the chicken:
    Season chicken with salt, pepper, paprika, and oregano.
  2. Cook the chicken:
    Heat olive oil in a large skillet over medium heat. Add chicken and cook for about 6–7 minutes per side until golden and cooked through. Remove and set aside.
  3. Cook the vegetables:
    In the same pan add garlic, potatoes, carrots, and broccoli. Stir well and cook for 5–7 minutes.
  4. Add broth:
    Pour in chicken broth, cover, and let simmer for 10–12 minutes until potatoes are tender.
  5. Serve:
    Slice the chicken and serve with the vegetables. Spoon some of the flavorful broth over the top.
