Cheesy Potato Fritters

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup all-purpose flour
  • 2 tbsp chopped green onions
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl mix mashed potatoes, cheese, eggs, flour, green onions, salt, and pepper.
  2. Form the mixture into small patties.
  3. Heat oil in a skillet over medium heat.
  4. Fry patties 3–4 minutes per side until golden brown.
  5. Drain on paper towels and serve warm.
