
Ingredients
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 2 eggs
- ¼ cup all-purpose flour
- 2 tbsp chopped green onions
- Salt and pepper to taste
- Oil for frying
Instructions
- In a bowl mix mashed potatoes, cheese, eggs, flour, green onions, salt, and pepper.
- Form the mixture into small patties.
- Heat oil in a skillet over medium heat.
- Fry patties 3–4 minutes per side until golden brown.
- Drain on paper towels and serve warm.
