Honey Lime Chicken and Avocado Rice Stack

Ingredients

For the chicken

  • 2 chicken breasts, diced
  • 2 tbsp honey
  • Juice of 2 limes
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper
  • 1 tbsp olive oil

For the rice layer

  • 2 cups cooked rice
  • 2 tbsp chopped cilantro
  • Juice of 1 lime
  • Salt to taste

For the avocado layer

  • 2 ripe avocados
  • Juice of ½ lime
  • Salt and pepper

Optional toppings

  • Cherry tomatoes, diced
  • Corn kernels
  • Red onion
  • Cilantro
  • Chili flakes

Instructions

1. Marinate the chicken

In a bowl, mix:

  • Honey
  • Lime juice
  • Soy sauce
  • Garlic
  • Paprika
  • Salt and pepper

Add chicken and marinate for 20–30 minutes.


2. Cook the chicken

Heat olive oil in a skillet over medium-high heat.

Cook chicken for about 6–8 minutes until caramelized and fully cooked.


3. Prepare the rice

Mix cooked rice with:

  • Lime juice
  • Cilantro
  • Salt

4. Prepare avocado mash

Mash avocados lightly with:

  • Lime juice
  • Salt
  • Pepper

Keep slightly chunky.


5. Assemble the stack

Using a small bowl or food ring:

  1. Add rice layer and press gently
  2. Add avocado layer
  3. Top with honey lime chicken

Carefully lift the mold.


Garnish

Top with:

  • Tomatoes
  • Corn
  • Cilantro
  • Extra lime drizzle

Serve immediately.
