- 1 cup all-purpose flour
- Β½ tsp baking powder
- Β½ tsp baking soda
- ΒΌ tsp salt
- Β½ cup unsalted butter (softened)
- β cup sugar
- 1 large egg
- 1 tsp vanilla extract
- Β½ cup buttermilk
- 1 cup fresh strawberries (halved)
- 1β2 tbsp sugar (for topping)

1. Prep
- Preheat oven to 175Β°C (350Β°F).
- Grease and line an 8-inch (20 cm) cake pan.
2. Mix dry ingredients
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. Cream butter & sugar
- In another bowl, beat butter and sugar until light and fluffy.
- Add egg and vanilla, mix well.
4. Combine
- Add dry ingredients in batches, alternating with buttermilk.
- Mix until just combined (donβt overmix).
5. Assemble
- Pour batter into the pan.
- Arrange strawberries on top (cut side down).
- Sprinkle 1β2 tbsp sugar over the top.
6. Bake
- Bake for 35β40 minutes, or until a toothpick comes out clean.
7. Cool & serve
- Let cool slightly before serving. Delicious warm or at room temp!
