🧾 Ingredients

  • 1 cup all-purpose flour
  • Β½ tsp baking powder
  • Β½ tsp baking soda
  • ΒΌ tsp salt
  • Β½ cup unsalted butter (softened)
  • β…” cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Β½ cup buttermilk
  • 1 cup fresh strawberries (halved)
  • 1–2 tbsp sugar (for topping)

1. Prep

  • Preheat oven to 175Β°C (350Β°F).
  • Grease and line an 8-inch (20 cm) cake pan.

2. Mix dry ingredients

  • In a bowl, whisk together flour, baking powder, baking soda, and salt.

3. Cream butter & sugar

  • In another bowl, beat butter and sugar until light and fluffy.
  • Add egg and vanilla, mix well.

4. Combine

  • Add dry ingredients in batches, alternating with buttermilk.
  • Mix until just combined (don’t overmix).

5. Assemble

  • Pour batter into the pan.
  • Arrange strawberries on top (cut side down).
  • Sprinkle 1–2 tbsp sugar over the top.

6. Bake

  • Bake for 35–40 minutes, or until a toothpick comes out clean.

7. Cool & serve

  • Let cool slightly before serving. Delicious warm or at room temp!

  • Use ripe, sweet strawberries for best flavor.
  • You can add a little lemon zest for extra freshness.
  • Serve with whipped cream or a scoop of vanilla ice cream.
