- 2 boneless chicken breasts (or thighs)
- 3 medium potatoes, peeled and diced
- 1 cup carrots, sliced
- 1 cup broccoli florets
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- ½ tsp black pepper
- 1 tsp salt (or to taste)
- ½ tsp dried oregano or Italian seasoning
- ½ cup chicken broth
Instructions
- Prepare the chicken:
Season chicken with salt, pepper, paprika, and oregano. - Cook the chicken:
Heat olive oil in a large skillet over medium heat. Add chicken and cook for about 6–7 minutes per side until golden and cooked through. Remove and set aside. - Cook the vegetables:
In the same pan add garlic, potatoes, carrots, and broccoli. Stir well and cook for 5–7 minutes. - Add broth:
Pour in chicken broth, cover, and let simmer for 10–12 minutes until potatoes are tender. - Serve:
Slice the chicken and serve with the vegetables. Spoon some of the flavorful broth over the top.
