
🧾 Ingredients
🍖 Meatloaf Base:
- 1 lb (450g) ground beef
- ½ cup breadcrumbs
- 1 egg
- ¼ cup milk
- ¼ cup finely chopped onion
- 2 cloves garlic (minced)
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- ½ tsp salt & pepper
🍯 Bourbon BBQ Glaze:
- ½ cup BBQ sauce
- 2 tbsp bourbon (optional but 🔥)
- 1 tbsp brown sugar
🥔 Mashed Potato Frosting:
- 2 cups mashed potatoes (smooth & creamy)
- 2 tbsp butter
- 2–3 tbsp milk or cream
- Salt to taste
👩🍳 Instructions
- Preheat oven
180°C (350°F). Grease a muffin tin. - Mix meatloaf
Combine all meatloaf ingredients until just mixed. - Shape cupcakes
Divide mixture into muffin cups and press lightly. - Bake (first round)
Bake for 15 minutes. - Add glaze
Mix BBQ sauce, bourbon, and sugar.
Brush over each meatloaf “cupcake”. - Bake again
Return to oven for 10–15 minutes until cooked through. - Prepare mashed potatoes
Whip potatoes with butter and milk until smooth. - Frost
Pipe or spoon mashed potatoes on top like frosting 🧁
