🥬🍅 Cabbage Roll Soup (Easy Crockpot Version)

📝 Ingredients:

  • 500 g ground beef (or ground turkey)
  • 1 small onion (chopped)
  • 2–3 carrots (diced)
  • 2 celery stalks (optional)
  • 3–4 cups cabbage (chopped)
  • 1 can (400 g) diced tomatoes
  • 2–3 tablespoons tomato paste
  • 1 liter beef broth (or water + stock cubes)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder (or 3 garlic cloves)
  • Salt & pepper to taste
  • 1 cup cooked rice (optional but traditional)
  • 1 tablespoon olive oil

👩‍🍳 Instructions:

🍲 Stovetop / Slow cooker method:

  1. In a pan, brown the ground beef with onion. Drain excess fat.
  2. Add everything into a large pot or slow cooker.
  3. Stir in tomatoes, tomato paste, broth, carrots, celery, cabbage, and spices.
  4. Cook:
    • Slow cooker: 6–8 hours low OR 3–4 hours high
    • Stovetop: simmer 45–60 minutes until veggies are soft
  5. Add cooked rice at the end if using.
  6. Taste and adjust salt/pepper.

💡 Tips:

  • The flavor gets even better the next day 😍
  • Add a splash of vinegar or lemon juice at the end for brightness
  • For thicker soup, use more tomato paste or less broth
