  • 2 cups shredded sweetened coconut
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp coconut extract (optional, for extra flavor)
  • Extra shredded coconut for rolling

Instructions

  1. Prepare the mixture
    In a mixing bowl, combine cream cheese, powdered sugar, vanilla extract, and coconut extract. Beat until smooth. Stir in shredded coconut until well combined.
  2. Form the balls
    Scoop about 1 tablespoon of mixture and roll into balls. Repeat with remaining mixture.
  3. Coat the balls
    Roll each ball in extra shredded coconut until fully coated.
  4. Chill
    Place the coconut balls on a baking sheet lined with parchment paper. Refrigerate for at least 1 hour to firm up.
  5. Serve
