🥣 No Flour, No Sugar Oat Cake

Ingredients

  • 2 cups rolled oats
  • 2 ripe bananas (the sweeter, the better)
  • 2 eggs
  • 1 cup milk (or almond milk)
  • 1 tsp baking powder
  • 1 tsp cinnamon (optional, but recommended)
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional add-ins: raisins, chopped apples, nuts, dark chocolate chips

🍰 Instructions

  1. Preheat oven to 180°C (350°F). Grease or line a baking pan.
  2. In a blender, blend oats until they become a coarse flour (or leave them whole for texture).
  3. In a bowl, mash the bananas well.
  4. Add eggs, milk, vanilla, and mix.
  5. Stir in oats, baking powder, cinnamon, and salt.
  6. Mix until you get a smooth batter. Add any optional ingredients.
  7. Pour into the pan and smooth the top.
  8. Bake for 25–35 minutes until golden and firm in the center.
  9. Let it cool before slicing.

🍯 Tips

  • Very ripe bananas = natural sweetness (no sugar needed).
  • Add grated apple for extra moisture.
  • Best texture after cooling completely.
