📝 Ingredients:

  • 2 cups finely grated carrots
  • 3 eggs
  • 1 cup ground oats (blend oats into flour)
  • 1/2 cup almond flour (or ground almonds)
  • 1/2 cup dates (blended into a paste)
  • 1/4 cup honey or maple syrup (optional for extra sweetness)
  • 1/2 cup oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or raisins (optional)

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, whisk eggs, oil, vanilla, and date paste until smooth.
  3. Add grated carrots and mix well.
  4. Stir in ground oats, almond flour, baking soda, baking powder, cinnamon, and salt.
  5. Fold in nuts or raisins if using.
  6. Pour batter into a greased pan.
  7. Bake for 30–40 minutes, or until a toothpick comes out clean.
  8. Let cool before slicing.
