🥕🍎 Oatmeal, Apple & Carrot Cake (No Sugar, No Flour)

Ingredients:

  • 2 cups rolled oats
  • 2 apples (peeled & grated)
  • 1 cup grated carrots
  • 2 eggs
  • 1/2 cup milk (or almond milk)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla extract (optional)
  • 1/4 cup raisins or dates (optional, for natural sweetness)
  • Pinch of salt

Instructions:

  1. Preheat oven to 180°C. Grease or line a baking pan.
  2. Blend the oats into a flour-like texture.
  3. In a bowl, mix grated apples, carrots, eggs, milk, and vanilla.
  4. Add the oat “flour,” cinnamon, baking powder, and salt. Mix well.
  5. Fold in raisins or chopped dates if using.
  6. Pour into the pan and bake for 35–40 minutes.
  7. Let it cool before slicing.

Tips:

  • The apples and carrots give natural sweetness and moisture.
  • Dates or raisins are optional but boost flavor without added sugar.
  • You can add nuts (walnuts or almonds) for crunch.
