
Ingredients:
- 2 cups rolled oats
- 2 apples (peeled & grated)
- 1 cup grated carrots
- 2 eggs
- 1/2 cup milk (or almond milk)
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla extract (optional)
- 1/4 cup raisins or dates (optional, for natural sweetness)
- Pinch of salt
Instructions:
- Preheat oven to 180°C. Grease or line a baking pan.
- Blend the oats into a flour-like texture.
- In a bowl, mix grated apples, carrots, eggs, milk, and vanilla.
- Add the oat “flour,” cinnamon, baking powder, and salt. Mix well.
- Fold in raisins or chopped dates if using.
- Pour into the pan and bake for 35–40 minutes.
- Let it cool before slicing.
Tips:
- The apples and carrots give natural sweetness and moisture.
- Dates or raisins are optional but boost flavor without added sugar.
- You can add nuts (walnuts or almonds) for crunch.
