🍰 Raspberry Coconut Snowball Cake

🧾 Ingredients:

For the cake:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 1 cup unsalted butter (softened)
  • 4 large eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup shredded coconut
  • 1 cup raspberries (fresh or frozen)

For the frosting:

  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • ½ cup cream cheese (softened)

For coating:

  • 1 ½ cups shredded coconut (for that “snowball” look 🥥❄️)

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F). Grease and line a round cake pan.
  2. Cream butter & sugar
    Beat until light and fluffy.
  3. Add eggs & vanilla
    Mix in eggs one at a time, then vanilla.
  4. Mix dry ingredients
    In another bowl, combine flour, baking powder, and salt.
  5. Combine
    Alternate adding dry ingredients and coconut milk into the batter.
  6. Fold in coconut & raspberries
    Gently mix to keep raspberries intact.
  7. Bake
    Pour into pan and bake for 35–40 minutes until golden and set.
  8. Cool completely

🎂 Frosting:

  1. Beat cream cheese until smooth.
  2. Add powdered sugar and vanilla.
  3. Whip heavy cream separately until soft peaks, then fold into mixture.
