
Ingredients
For the Crust
- 2Β½ cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup cold unsalted butter, cubed
- 6β8 tbsp ice water
For the Apple Filling
- 6 cups apples, peeled and sliced
- ΒΎ cup granulated sugar
- ΒΌ cup brown sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- ΒΌ tsp nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
For the Top
- 1 egg (for egg wash)
- 1 tbsp sugar (optional)
Instructions
- Prepare the crust
In a bowl mix flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Divide into two discs, wrap, and refrigerate for 30 minutes. - Make the filling
In a large bowl combine apples, sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla. Mix well. - Assemble the pie
Roll out one dough disc and place it in a 9-inch pie dish. Add the apple filling. Roll out the second dough and place over the top (or make a lattice crust). - Finish the top
Brush with beaten egg and sprinkle sugar on top. - Bake
Bake at 375Β°F (190Β°C) for 45β55 minutes, until the crust is golden and the filling is bubbling. - Cool before serving
Let the pie cool for at least 2 hours so the filling sets.
