🍌 Banana Pudding Cookies (Easy & Simple)

Ingredients

  • 1 box banana cream instant pudding mix (3.4 oz)
  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2¼ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup white chocolate chips
  • 1 cup crushed vanilla wafers

Instructions

  1. Preheat oven
    Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars
    In a bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs and pudding mix
    Mix in eggs one at a time. Add vanilla and the dry banana pudding mix and beat until smooth.
  4. Add dry ingredients
    Stir in flour, baking soda, and salt until combined.
  5. Fold in extras
    Gently mix in white chocolate chips and crushed vanilla wafers.
  6. Scoop cookies
    Drop spoonfuls of dough onto the baking sheet, spacing about 2 inches apart.
  7. Bake
    Bake for 10–12 minutes until edges are lightly golden.
  8. Cool
    Let cookies cool on the baking sheet for 5 minutes, then transfer to a rack.
