For the crust:
- 2 cups crushed vanilla wafers

For the cheesecake layer:
- 450g cream cheese (softened)
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup mashed ripe bananas (about 2โ3 bananas)
For the pudding layer:
- 1 box (instant) vanilla pudding mix
- 2 cups cold milk
For topping:
- 1ยฝ cups whipped cream (or whipped topping)
- Sliced bananas
- Whole or crushed vanilla wafers

1. Prepare the crust
- Preheat oven to 175ยฐC (350ยฐF).
- Mix crushed vanilla wafers with melted butter.
- Press firmly into the bottom of a springform pan.
- Bake for 8โ10 minutes, then let cool.
2. Make the cheesecake layer
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well.
- Stir in vanilla and mashed bananas.
- Pour over the cooled crust.
3. Bake
- Bake for 50โ60 minutes, until center is just set.
- Turn off oven and let cheesecake cool inside slightly.
- Chill in fridge for at least 4 hours (preferably overnight).
4. Add pudding layer
- Whisk pudding mix with cold milk until thick.
- Spread evenly over the chilled cheesecake.
5. Decorate
- Top with whipped cream.
- Add banana slices and vanilla wafers for garnish.

- Toss banana slices in a little lemon juice to prevent browning.
- For extra flavor, drizzle caramel or add a layer of sliced bananas between cheesecake and pudding.
