For the crust:

  • 2 cups crushed vanilla wafers
  • ยฝ cup melted butter

For the cheesecake layer:

  • 450g cream cheese (softened)
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas (about 2โ€“3 bananas)

For the pudding layer:

  • 1 box (instant) vanilla pudding mix
  • 2 cups cold milk

For topping:

  • 1ยฝ cups whipped cream (or whipped topping)
  • Sliced bananas
  • Whole or crushed vanilla wafers

๐Ÿ‘ฉโ€๐Ÿณ Instructions

1. Prepare the crust

  • Preheat oven to 175ยฐC (350ยฐF).
  • Mix crushed vanilla wafers with melted butter.
  • Press firmly into the bottom of a springform pan.
  • Bake for 8โ€“10 minutes, then let cool.

2. Make the cheesecake layer

  • Beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing well.
  • Stir in vanilla and mashed bananas.
  • Pour over the cooled crust.

3. Bake

  • Bake for 50โ€“60 minutes, until center is just set.
  • Turn off oven and let cheesecake cool inside slightly.
  • Chill in fridge for at least 4 hours (preferably overnight).

4. Add pudding layer

  • Whisk pudding mix with cold milk until thick.
  • Spread evenly over the chilled cheesecake.

5. Decorate

  • Top with whipped cream.
  • Add banana slices and vanilla wafers for garnish.

  • Toss banana slices in a little lemon juice to prevent browning.
  • For extra flavor, drizzle caramel or add a layer of sliced bananas between cheesecake and pudding.
  • Best served cold for clean slices and perfect texture.
