Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract
  • Oil or butter for frying (if making fried version)
  • Powdered sugar or cinnamon sugar for topping

Instructions

  1. Mix dry ingredients
    • In a bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. Mix wet ingredients
    • In another bowl, whisk together milk, egg, melted butter, and vanilla.
  3. Combine
    • Gradually mix wet ingredients into dry until smooth. The batter should be slightly thick but pourable.
  4. CookOption 1 – Fried (classic β€œchubbs” style)
    • Heat oil in a deep pan to 350Β°F (175Β°C).
    • Drop spoonfuls of batter into hot oil. Fry until golden brown, turning once.
    • Drain on paper towels and sprinkle with powdered sugar or cinnamon sugar.
    Option 2 – Baked (lighter version)
    • Preheat oven to 375Β°F (190Β°C).
    • Pour batter into a greased muffin tin or small cake molds.
    • Bake 15–20 minutes or until a toothpick comes out clean.
    • Cool slightly and sprinkle with sugar.
