Ingredients
- 2 chicken breasts, diced
- 8 oz pasta (penne or spaghetti)
- 2 cups cherry tomatoes, diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- ΒΌ tsp red pepper flakes (optional)
- ΒΌ cup fresh basil, chopped
- ΒΌ cup grated Parmesan cheese
- 1 tbsp balsamic glaze (optional)
Instructions
- Cook pasta
- Boil pasta in salted water until al dente.
- Reserve Β½ cup pasta water, then drain.
- Cook chicken
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt, pepper, and Italian seasoning.
- Cook 6β8 minutes until golden and fully cooked.
- Make bruschetta topping
- Add garlic and tomatoes to the skillet.
- Cook 2β3 minutes just until tomatoes soften slightly.
- Combine
- Stir in butter, cooked pasta, and a splash of reserved pasta water.
- Toss everything together.
- Finish
- Add fresh basil and Parmesan.
- Drizzle with balsamic glaze if desired.
