đź§ľ Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • Âľ cup sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 can (crushed pineapple, ~400g) with juice
  • ½ cup chopped nuts (optional – walnuts or pecans)
  • ½ cup shredded coconut (optional)

👩‍🍳 Instructions

1. Prep

  • Preheat oven to 175°C (350°F).
  • Grease and line a loaf pan.

2. Mix dry ingredients

  • In a bowl, whisk flour, baking soda, and salt.

3. Mix wet ingredients

  • In another bowl, beat eggs and sugar until slightly thick.
  • Add oil and vanilla, mix well.
  • Stir in crushed pineapple with its juice.

4. Combine

  • Add dry ingredients to wet and mix gently until just combined.
  • Fold in nuts and coconut if using.

5. Bake

  • Pour batter into the pan.
  • Bake 50–60 minutes, or until a toothpick comes out clean.

6. Cool

  • Let cool in pan for 10–15 minutes, then transfer to a rack.

🍯 Optional Sweet Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp pineapple juice (or milk)

Mix and drizzle over cooled bread for extra sweetness.
