- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- Âľ cup sugar
- 2 large eggs
- ½ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- 1 can (crushed pineapple, ~400g) with juice
- ½ cup chopped nuts (optional – walnuts or pecans)
- ½ cup shredded coconut (optional)

1. Prep
- Preheat oven to 175°C (350°F).
- Grease and line a loaf pan.
2. Mix dry ingredients
- In a bowl, whisk flour, baking soda, and salt.
3. Mix wet ingredients
- In another bowl, beat eggs and sugar until slightly thick.
- Add oil and vanilla, mix well.
- Stir in crushed pineapple with its juice.
4. Combine
- Add dry ingredients to wet and mix gently until just combined.
- Fold in nuts and coconut if using.
5. Bake
- Pour batter into the pan.
- Bake 50–60 minutes, or until a toothpick comes out clean.
6. Cool
- Let cool in pan for 10–15 minutes, then transfer to a rack.
🍯 Optional Sweet Glaze
- 1 cup powdered sugar
- 2–3 tbsp pineapple juice (or milk)
Mix and drizzle over cooled bread for extra sweetness.
