🍰 Soufflé Fluffy Yogurt Cake

🧾 Ingredients

  • 3 eggs (separated)
  • ½ cup (120g) plain yogurt
  • 3 tbsp sugar (for yolks)
  • 3 tbsp sugar (for egg whites)
  • 2 tbsp milk
  • 2 tbsp oil or melted butter
  • ½ cup (60g) cake flour (or all-purpose flour sifted)
  • 1 tsp lemon juice (or vinegar)
  • ½ tsp vanilla extract

👩‍🍳 Instructions

  1. Preheat oven
    160°C (320°F). Prepare a small cake pan and line it.
  2. Mix yolk batter
    In a bowl, whisk:
    • Egg yolks + sugar
    • Add yogurt, milk, oil, vanilla
    • Mix until smooth
    • Sift in flour and mix gently
  3. Make meringue
    • Beat egg whites with lemon juice
    • Gradually add sugar
    • Beat until soft peaks form
  4. Fold gently
    • Add meringue in 3 parts into yolk batter
    • Fold carefully to keep air inside
  5. Water bath baking (important!)
    • Pour batter into pan
    • Place pan in a larger tray with hot water
    • Bake for 50–60 minutes
  6. Cool slowly
    • Turn off oven, leave door slightly open for 10–15 minutes
    • Remove and cool completely

  • Super fluffy ☁️
  • Slightly jiggly like cheesecake
  • Light yogurt flavor
