
🧾 Ingredients
🍰 For the Vanilla Cake Layers:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter (softened)
- 1 ¾ cups sugar
- 4 eggs
- 1 tbsp vanilla extract
- 1 cup milk
🧀 For the Cheesecake Layer:
- 450g (16 oz) cream cheese (softened)
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup sour cream
🍓 For the Strawberry Filling:
- 2 cups fresh strawberries (chopped)
- ¼ cup sugar
- 1 tbsp lemon juice
🍦 For the Frosting:
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla
👩🍳 Instructions
1️⃣ Cheesecake Layer
- Preheat oven to 160°C (320°F).
- Beat cream cheese and sugar until smooth.
- Add eggs, vanilla, and sour cream.
- Pour into a lined pan and bake 40–45 minutes.
- Cool completely, then refrigerate (best overnight).
2️⃣ Strawberry Filling
- Cook strawberries, sugar, and lemon juice on medium heat.
- Simmer until thick and jam-like.
- Let cool.
3️⃣ Vanilla Cake Layers
- Preheat oven to 180°C (350°F).
- Mix dry ingredients in one bowl.
- Cream butter and sugar, add eggs and vanilla.
- Alternate adding flour mixture and milk.
- Bake in 2 pans for 25–30 minutes. Cool completely.
4️⃣ Whipped Cream Frosting
- Beat cream, powdered sugar, and vanilla until stiff peaks form.
🎂 Assembly
- Place first cake layer
- Add strawberry filling
- Place cheesecake layer
- Add more strawberries
- Top with second cake layer
- Frost with whipped cream
