🧁 Vanilla Sponge Cake (2 Layers)

πŸ“ Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 Β½ cups (300g) sugar
  • 1 cup (240ml) milk (room temperature)
  • Β½ cup (115g) butter (softened)
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 2 Β½ tsp baking powder
  • Β½ tsp salt

  1. Preheat oven to 180Β°C (350Β°F).
    Grease and line two 8-inch (20cm) round cake pans.
  2. Cream butter & sugar
    In a bowl, beat butter and sugar until light and fluffy (about 3–4 minutes).
  3. Add eggs
    Add eggs one at a time, mixing well after each addition.
  4. Add vanilla
    Mix in the vanilla extract.
  5. Mix dry ingredients
    In another bowl, whisk flour, baking powder, and salt.
  6. Combine wet & dry
    Add dry ingredients to the batter alternately with milk.
    Start and end with flour. Mix gentlyβ€”don’t overmix.
  7. Bake
    Divide batter evenly between pans.
    Bake for 25–30 minutes or until a toothpick comes out clean.
  8. Cool
    Let cakes cool in pans for 10 minutes, then transfer to a rack to cool completely.
