📝 Ingredients

  • 1 medium head of cabbage (chopped)
  • 2 medium carrots (sliced)
  • 2 celery stalks (sliced)
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 1 can (14 oz) diced tomatoes (with juice)
  • 6 cups vegetable or chicken broth
  • 1 tsp salt (to taste)
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp dried thyme or Italian seasoning
  • 2 tbsp olive oil
  • Fresh parsley (for garnish)

👩‍🍳 Instructions

1. Sauté the Veggies:

  • Heat olive oil in a large pot over medium heat.
  • Add onions, carrots, and celery. Sauté 5–7 minutes until softened.
  • Add garlic and cook 1 minute until fragrant.

2. Add Broth and Tomatoes:

  • Pour in the broth and diced tomatoes.
  • Stir in salt, pepper, paprika, and thyme.
  • Bring to a gentle boil.

3. Add Cabbage:

  • Add chopped cabbage.
  • Reduce heat to low, cover, and simmer 20–30 minutes until cabbage is tender.

🍽️ Serve

  • Ladle into bowls, sprinkle with fresh parsley.
  • Serve hot with crusty bread or crackers.
