- 1 medium head of cabbage (chopped)

👩🍳 Instructions
1. Sauté the Veggies:
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté 5–7 minutes until softened.
- Add garlic and cook 1 minute until fragrant.
2. Add Broth and Tomatoes:
- Pour in the broth and diced tomatoes.
- Stir in salt, pepper, paprika, and thyme.
- Bring to a gentle boil.
3. Add Cabbage:
- Add chopped cabbage.
- Reduce heat to low, cover, and simmer 20–30 minutes until cabbage is tender.
