For the Chicken:

  • 2 large chicken breasts (halved lengthwise)
  • Salt & black pepper (to taste)
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic (minced)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup chicken broth
  • Fresh parsley (for garnish)

For the Creamy Parmesan Pasta:

  • 250g pasta (fettuccine or penne)
  • 2 tbsp butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ½ cup milk
  • Salt & pepper (to taste)
  • ½ tsp Italian seasoning

👩‍🍳 Instructions

1. Cook the Pasta:

  • Boil pasta in salted water according to package instructions.
  • Reserve ½ cup pasta water, then drain and set aside.

2. Prepare the Chicken:

  1. Season chicken with salt, pepper, paprika, and Italian seasoning.
  2. Heat butter + olive oil in a pan over medium heat.
  3. Sear chicken 4–5 minutes per side until golden and cooked through.
  4. Remove and set aside.

3. Make Lemon Garlic Butter Sauce:

  1. In the same pan, add garlic and sauté until fragrant.
  2. Add lemon juice, zest, and chicken broth.
  3. Let simmer 2–3 minutes.
  4. Return chicken to the pan and coat with sauce.

4. Make Creamy Parmesan Pasta:

  1. In another pan, melt butter and sauté garlic.
  2. Add cream, milk, and seasoning. Simmer gently.
  3. Stir in Parmesan cheese until melted and smooth.
  4. Add cooked pasta and toss.
  5. Use reserved pasta water if needed for a silky texture.

🍽️ Serve

  • Plate creamy pasta and top with lemon garlic chicken.
  • Spoon extra sauce over the top.
  • Garnish with parsley and extra Parmesan.
