🍍 Pineapple Pecan Cream Cheese Pound Cake

📝 Ingredients:

🧁 Cake:

  • 1 cup butter (softened)
  • 1 package (225g) cream cheese (softened)
  • 2 cups sugar
  • 4 eggs
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple (drained) 🍍
  • 1 cup chopped pecans 🌰

🍋 Glaze (optional):

  • 1 cup powdered sugar
  • 2–3 tbsp pineapple juice or milk
  • ½ tsp vanilla

👨‍🍳 Instructions:

  1. Preheat oven
    160–170°C (325°F). Grease a bundt or loaf pan.
  2. Cream butter & cheese
    Beat butter + cream cheese until smooth and fluffy.
  3. Add sugar
    Mix in sugar until light and creamy.
  4. Add eggs
    Add eggs one at a time, mixing well after each.
  5. Dry ingredients
    In another bowl, mix flour, baking powder, and salt.
  6. Combine
    Gradually add dry ingredients to the batter.
    Stir in vanilla.
  7. Fold in extras
    Gently mix in crushed pineapple and pecans.
  8. Bake
    Pour into pan and bake 60–75 minutes until a toothpick comes out clean.
  9. Cool & glaze
    Let cool, then drizzle glaze on top 🍍✨
