Southern Fried Chicken Batter

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional)
  • 1½ cups buttermilk
  • Chicken pieces
  • Oil for frying

Instructions

  1. In a bowl mix flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder, and cayenne.
  2. Dip chicken pieces in buttermilk.
  3. Coat the chicken well in the flour mixture.
  4. Let coated chicken rest 10 minutes.
  5. Heat oil to 175°C / 350°F.
  6. Fry chicken 12–15 minutes until golden brown and cooked through.
  7. Drain on paper towels and serve hot.
