Salted Caramel Shortbread Bars

Ingredients

Shortbread base

  • 1 cup (225 g) butter, softened
  • ½ cup sugar
  • 2 cups all-purpose flour
  • ¼ tsp salt

Caramel filling

  • 1 cup butter
  • 1 cup brown sugar
  • 2 tbsp honey or corn syrup
  • 1 can (395 g / 14 oz) sweetened condensed milk
  • ½ tsp salt

Topping

  • Flaky sea salt

Instructions

  1. Preheat oven to 180°C / 350°F. Line a baking pan with parchment paper.
  2. Mix butter and sugar until creamy. Add flour and salt and mix to form a dough.
  3. Press dough evenly into the pan.
  4. Bake 18–20 minutes until lightly golden.
  5. In a saucepan melt butter, brown sugar, honey, condensed milk, and salt.
  6. Cook on medium heat 5–8 minutes, stirring until thick caramel forms.
  7. Pour caramel over the baked shortbread.
  8. Bake again 10–12 minutes.
  9. Cool completely, sprinkle flaky sea salt, then cut into squares.
