
Ingredients
- 2 cucumbers, sliced
- 2 tomatoes, chopped
- ½ onion, thinly sliced
- 2 tbsp olive oil
- 2 tbsp vinegar or lemon juice
- Salt and black pepper to taste
- 1 tbsp chopped fresh parsley (optional)
Instructions
- In a bowl combine cucumbers, tomatoes, and onion.
- Drizzle with olive oil and vinegar (or lemon juice).
- Season with salt and black pepper.
- Toss well to combine.
- Sprinkle with fresh parsley if desired.
- Chill 15–20 minutes before serving for best flavor.
