🍠 Pecan Praline Sweet Potato Cake

For the Cake

  • 2 cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups cooked and mashed sweet potatoes
  • ½ cup milk

For the Pecan Praline Topping

  • ½ cup unsalted butter
  • ½ cup brown sugar, packed
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1 cup chopped pecans

Optional Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan.
  2. Prepare the cake batter
    • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
    • In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then vanilla.
    • Mix in mashed sweet potatoes.
    • Gradually add dry ingredients alternating with milk until smooth.
  3. Bake
    Pour batter into the prepared pan and bake 40–45 minutes, or until a toothpick inserted comes out clean. Let cool.
  4. Make the praline topping
    • In a small saucepan, melt butter with brown sugar and cream over medium heat until smooth.
    • Remove from heat and stir in vanilla and chopped pecans.
  5. Top the cake
    Pour the warm praline topping evenly over the cooled cake.
  6. Optional frosting
    For an extra layer, beat cream cheese with butter, powdered sugar, and vanilla. Spread over cake before adding praline topping.
