🧾 Ingredients

🍰 Cake:

  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter (softened)
  • 8 oz (225g) cream cheese (softened)
  • 1 ¾ cups sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • ½ cup milk
  • ½ cup sour cream (extra moisture 😍)
  • 1 ½ cups fresh strawberries (finely chopped)

🍓 Strawberry Filling:

  • 2 cups strawberries (chopped)
  • ⅓ cup sugar
  • 1 tbsp lemon juice

🍦 Cream Cheese Frosting:

  • 8 oz (225g) cream cheese
  • ½ cup butter
  • 3–4 cups powdered sugar
  • 1 tsp vanilla

👩‍🍳 Instructions

1️⃣ Strawberry Filling

  1. Cook strawberries, sugar, and lemon juice over medium heat.
  2. Simmer until thick like jam.
  3. Let it cool completely.

2️⃣ Cake

  1. Preheat oven to 180°C (350°F).
  2. Mix flour, baking powder, and salt.
  3. Beat butter + cream cheese until smooth and creamy.
  4. Add sugar and beat until light and fluffy.
  5. Add eggs one by one, then vanilla.
  6. Mix in sour cream.
  7. Alternate adding dry ingredients and milk.
  8. Fold in strawberries gently.
  9. Bake in 2 pans for 30–35 minutes. Cool fully.

3️⃣ Frosting

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Mix in vanilla until fluffy.

🎂 Assembly

  1. First cake layer
  2. Spread strawberry filling 🍓
  3. Add second layer
  4. Frost entire cake
  5. Decorate with strawberries on top ✨

🔥 Bakery Tips

  • Toss strawberries in a little flour before adding → prevents sinking
  • Chill cake 30 min before slicing for clean layers
  • Use room temp ingredients for smooth batter
