🍰 Cake:
- 2 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter (softened)
- 8 oz (225g) cream cheese (softened)
- 1 ¾ cups sugar
- 4 large eggs
- 1 tbsp vanilla extract
- ½ cup milk
- ½ cup sour cream (extra moisture 😍)
- 1 ½ cups fresh strawberries (finely chopped)
🍓 Strawberry Filling:
- 2 cups strawberries (chopped)
- ⅓ cup sugar
- 1 tbsp lemon juice
🍦 Cream Cheese Frosting:
- 8 oz (225g) cream cheese
- ½ cup butter
- 3–4 cups powdered sugar
- 1 tsp vanilla
👩🍳 Instructions
1️⃣ Strawberry Filling
- Cook strawberries, sugar, and lemon juice over medium heat.
- Simmer until thick like jam.
- Let it cool completely.
2️⃣ Cake
- Preheat oven to 180°C (350°F).
- Mix flour, baking powder, and salt.
- Beat butter + cream cheese until smooth and creamy.
- Add sugar and beat until light and fluffy.
- Add eggs one by one, then vanilla.
- Mix in sour cream.
- Alternate adding dry ingredients and milk.
- Fold in strawberries gently.
- Bake in 2 pans for 30–35 minutes. Cool fully.
3️⃣ Frosting
- Beat cream cheese and butter until smooth.
- Add powdered sugar gradually.
- Mix in vanilla until fluffy.
🎂 Assembly
- First cake layer
- Spread strawberry filling 🍓
- Add second layer
- Frost entire cake
- Decorate with strawberries on top ✨
