🍒 Heavenly German Cherry Cream Meringue Cake (Himmelstorte Style) 🍰
A classic German-inspired cake with soft layers, crunchy meringue, fluffy cream, and juicy cherries—absolutely irresistible!

🧁 Ingredients
🍰 Cake + Meringue Layers:
- 125g butter (softened)
- 1/2 cup sugar
- 4 eggs (separated)
- 1 1/2 cups flour
- 1 tsp baking powder
- 2 tbsp milk
- 1 tsp vanilla
☁️ Meringue:
- 4 egg whites
- 1 cup sugar
- 1 tsp lemon juice or vinegar
- 1/2 cup sliced almonds (optional but traditional)
🍒 Cherry Filling:
- 2 cups cherries (fresh or jarred, pitted)
- 1/3 cup sugar
- 2 tbsp cornstarch
- 1/2 cup cherry juice or water
🍦 Cream Filling:
- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla
👩🍳 Instructions
1️⃣ Prepare Cake Base:
- Preheat oven to 180°C
- Cream butter + sugar until fluffy
- Add egg yolks one at a time
- Mix in flour, baking powder, milk, vanilla
- Divide batter into 2 round pans
2️⃣ Make Meringue Layer:
- Beat egg whites until soft peaks
- Gradually add sugar, beat until stiff & glossy
- Mix in lemon juice
- Spread meringue over each cake batter layer
- Sprinkle almonds on top
3️⃣ Bake:
- Bake for 25–30 minutes
- Meringue should be lightly golden
- Let layers cool completely
4️⃣ Make Cherry Filling:
- Cook cherries, sugar, and juice in a saucepan
- Stir in cornstarch (mixed with a little water)
- Cook until thick
- Cool completely
5️⃣ Whip Cream:
- Beat cream, powdered sugar, and vanilla to stiff peaks
6️⃣ Assemble:
- Bottom layer (meringue side up)
- Spread whipped cream
- Add cherry filling
- Top with second layer
