- 4 large yellow onions (thinly sliced)
- 4 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 2 cloves garlic (minced)
- 8 cups beef broth (or a mix of beef & chicken broth)
- Β½ cup dry white wine or sherry (optional)
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 bay leaves
- Salt & black pepper to taste
- Baguette slices (toasted)
- 1½ cups grated Gruyère or Swiss cheese

1. Caramelize the Onions:
- Heat butter + olive oil in a large pot over medium heat.
- Add onions and sugar, cook 30β40 minutes, stirring occasionally, until deep golden brown.
- Add garlic and cook 1β2 minutes.
2. Add Broth & Herbs:
- Deglaze with white wine (optional), scraping up brown bits.
- Add broth, thyme, and bay leaves.
- Bring to a simmer, then reduce heat and cook 20β30 minutes.
- Season with salt and pepper.
3. Prepare Topping:
- Preheat oven broiler.
- Ladle soup into oven-safe bowls.
- Top each with toasted baguette slice and generous amount of grated cheese.
4. Broil:
- Place bowls under broiler 2β5 minutes until cheese is melted, bubbly, and golden.
