- 2 cups (250g) all-purpose flour
- 1 Β½ cups (300g) sugar
- 1 cup (240ml) milk (room temperature)
- Β½ cup (115g) butter (softened)
- 3 large eggs (room temperature)
- 2 tsp vanilla extract
- 2 Β½ tsp baking powder
- Β½ tsp salt

- Preheat oven to 180Β°C (350Β°F).
Grease and line two 8-inch (20cm) round cake pans. - Cream butter & sugar
In a bowl, beat butter and sugar until light and fluffy (about 3β4 minutes). - Add eggs
Add eggs one at a time, mixing well after each addition. - Add vanilla
Mix in the vanilla extract. - Mix dry ingredients
In another bowl, whisk flour, baking powder, and salt. - Combine wet & dry
Add dry ingredients to the batter alternately with milk.
Start and end with flour. Mix gentlyβdonβt overmix. - Bake
Divide batter evenly between pans.
Bake for 25β30 minutes or until a toothpick comes out clean. - Cool
Let cakes cool in pans for 10 minutes, then transfer to a rack to cool completely.

- Use room temperature ingredients for a fluffy texture
- Donβt overmix or the cake will be dense
- You can frost with buttercream, whipped cream, or chocolate frosting
