- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- ¾ cup pearl barley
- 6 cups beef broth
- 1 cup diced tomatoes (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons chopped parsley (for garnish)

Heat olive oil in a large pot over medium heat. Add the beef cubes and cook until browned.
Cook the vegetables
Add onion, carrots, celery, and garlic. Cook for about 5 minutes until slightly soft.
Add the barley and broth
Stir in the pearl barley, beef broth, tomatoes, thyme, salt, pepper, and bay leaf.
Simmer
Bring to a boil, then reduce heat and simmer for 45–60 minutes until the barley is tender and the beef is soft.
