🛒 Ingredients:

  • 500g catfish fillets
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper (optional 🌶️)
  • Salt & black pepper (to taste)
  • 1 cup buttermilk (or milk)
  • Oil for frying

👨‍🍳 Instructions:

1. Prep the Fish:

  • Rinse catfish and pat dry.
  • Soak in buttermilk for 15–30 minutes (removes strong taste & tenderizes).

2. Make Coating:

  • In a bowl, mix cornmeal, flour, and all spices.

3. Coat:

  • Remove fish from buttermilk.
  • Dredge in the cornmeal mixture, pressing to coat well.

4. Fry:

  • Heat oil to 175–180°C (350°F).
  • Fry fish for 4–6 minutes until golden brown and crispy.
  • Remove and drain on paper towels.

🍽️ Serve:

Best served hot with:

  • Lemon wedges 🍋
  • Tartar sauce
  • Fries or coleslaw
