1. Prepare the Cake:
- Preheat oven to 180°C (350°F) and grease a baking pan.
- In a bowl, cream butter, oil, and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla and crushed pineapple (with juice).
- In another bowl, mix flour, baking powder, baking soda, and salt.
- Gradually combine dry ingredients with wet mixture.
- Fold in shredded coconut.
- Pour into pan and bake for 30–35 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
2. Make the Cream Filling:
- Beat cream cheese until smooth.
- Add powdered sugar and vanilla.
- In another bowl, whip the cream until stiff peaks form.
- Fold whipped cream into the cream cheese mixture.
3. Assemble:
- Slice cake in half (if making layers).
- Spread cream filling between layers and on top.
- Add whipped cream on top.
- Sprinkle toasted coconut and garnish with pineapple.
