For the Chicken:
- 2 large chicken breasts (halved lengthwise)
- Salt & black pepper (to taste)
- 1 tsp paprika
- 1 tsp Italian seasoning
- 2 tbsp butter
- 1 tbsp olive oil
- 4 cloves garlic (minced)
- Juice of 1 lemon
- Zest of 1 lemon
- ½ cup chicken broth
- Fresh parsley (for garnish)
For the Creamy Parmesan Pasta:
- 250g pasta (fettuccine or penne)
- 2 tbsp butter
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- ½ cup milk
- Salt & pepper (to taste)
- ½ tsp Italian seasoning
👩🍳 Instructions
1. Cook the Pasta:
- Boil pasta in salted water according to package instructions.
- Reserve ½ cup pasta water, then drain and set aside.
2. Prepare the Chicken:
- Season chicken with salt, pepper, paprika, and Italian seasoning.
- Heat butter + olive oil in a pan over medium heat.
- Sear chicken 4–5 minutes per side until golden and cooked through.
- Remove and set aside.
3. Make Lemon Garlic Butter Sauce:
- In the same pan, add garlic and sauté until fragrant.
- Add lemon juice, zest, and chicken broth.
- Let simmer 2–3 minutes.
- Return chicken to the pan and coat with sauce.
4. Make Creamy Parmesan Pasta:
- In another pan, melt butter and sauté garlic.
- Add cream, milk, and seasoning. Simmer gently.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and toss.
- Use reserved pasta water if needed for a silky texture.
🍽️ Serve
- Plate creamy pasta and top with lemon garlic chicken.
- Spoon extra sauce over the top.
- Garnish with parsley and extra Parmesan.
