- 1 lb chicken gizzards, cleaned
- 1 cup buttermilk
- 1 cup all-purpose flour
- ½ cup cornmeal (optional, for extra crunch)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (optional)

1️⃣ Tenderize the Gizzards
Place the gizzards in a pot with water and a little salt.
Simmer for 30–40 minutes until they become tender. Drain and let cool.
2️⃣ Marinate
Place cooked gizzards in a bowl with buttermilk.
Let them soak for 20–30 minutes for extra flavor and tenderness.
3️⃣ Prepare the Coating
In a bowl, mix flour, cornmeal, salt, pepper, garlic powder, paprika, and cayenne.
4️⃣ Coat the Gizzards
Remove gizzards from buttermilk and dredge them in the flour mixture until well coated.
