🍖 Meatloaf:
- 1 lb ground beef (or mix beef & pork)
- ½ cup breadcrumbs
- ½ cup finely chopped onion
- 1 large egg
- ¼ cup milk
- 2 tbsp Worcestershire sauce
- 2 tbsp bourbon (optional for smoky flavor)
- ½ cup smoky BBQ sauce
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt & pepper to taste
🥔 Mashed Potato Frosting:
- 2 cups mashed potatoes (buttery & smooth)
- 2 tbsp butter
- ¼ cup milk (adjust for piping consistency)
- Salt & pepper to taste
👩🍳 Instructions
1️⃣ Prep Meatloaf
- Preheat oven to 180°C (350°F).
- In a large bowl, combine ground meat, breadcrumbs, onion, egg, milk, Worcestershire, bourbon, garlic powder, paprika, salt, and pepper.
- Mix gently until combined (don’t overwork).
2️⃣ Assemble Cupcakes
- Line a muffin pan with paper liners or grease well.
- Scoop meatloaf mixture into cups, filling about ¾ full.
- Top each with 1 tsp BBQ sauce.
3️⃣ Bake
- Bake for 20–25 minutes until cooked through.
4️⃣ Mashed Potato Frosting
- Beat mashed potatoes with butter and milk until smooth and pipeable.
- Once meatloaf cupcakes are baked, let cool 5 min.
- Pipe mashed potato swirls on top like frosting.
- Optional: sprinkle smoked paprika or chives for garnish 🌿
