🧁 Cake:
- 1 cup butter (softened)
- 1 package (225g) cream cheese (softened)
- 2 cups sugar
- 4 eggs
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract
- 1 cup crushed pineapple (drained) 🍍
- 1 cup chopped pecans 🌰
🍋 Glaze (optional):
- 1 cup powdered sugar
- 2–3 tbsp pineapple juice or milk
- ½ tsp vanilla
👨🍳 Instructions:
- Preheat oven
160–170°C (325°F). Grease a bundt or loaf pan. - Cream butter & cheese
Beat butter + cream cheese until smooth and fluffy. - Add sugar
Mix in sugar until light and creamy. - Add eggs
Add eggs one at a time, mixing well after each. - Dry ingredients
In another bowl, mix flour, baking powder, and salt. - Combine
Gradually add dry ingredients to the batter.
Stir in vanilla. - Fold in extras
Gently mix in crushed pineapple and pecans. - Bake
Pour into pan and bake 60–75 minutes until a toothpick comes out clean. - Cool & glaze
Let cool, then drizzle glaze on top 🍍✨
